Chicken Soup

Time: 20 minutes (10 minutes prep time, 10 minutes cook time)


Craving chicken soup? You can get the flavor of chicken using tofu and a
seasoning blend full of spices usually paired with poultry. The hot and
comforting dish only takes 10 minutes under pressure followed by a quickrelease, so you can get your fix in a flash.


Ingredients:
6 cups hot water
1 cup diced potatoes
2 diced carrots
1 minced onion
1 diced celery rib
¾ cup cubed, extra-firm tofu
2 bay leaves
2 tablespoons seasoning blend*
2 teaspoons minced garlic
1 teaspoon salt
⅛ teaspoon dried thyme
*¾ cup nutritional yeast flakes
1 ½ tablespoons onion powder
1 tablespoon dried basil
1 tablespoon dried oregano
1 tablespoon dried parsley

1 teaspoon salt
½ teaspoon celery seed
¼ teaspoon white pepper


Cooking Tip: You can use your seasoning blend for any dish that
requires a chicken-like flavor! About ½ tablespoon per 1 cup of hot
water will produce a good flavor.


Directions:
1. To make your seasoning blend, put everything in a blender and
process until it has become a fine powder. Don’t breathe it in.
2. Mix 2 tablespoons into your water and set aside.
3. Turn your pressure cooker to “sauté” and cook the onion until brown.
4. Add garlic and cook for another minute.
5. Add the rest of the ingredients, including the seasoned water.
6. Close and seal the lid.
7. Select “soup” and adjust time to 10 minutes.
8. When time is up, hit “cancel” to turn off the cooker, and then quickrelease.
9. Serve!
