Instant Pot Colombian Style Red Beans

 

Sometimes the “cooking Beast” inside you wants to make its duty, and you don’t know how to start or what to start with, especially for beginners in the cooking world, that’s why we provide you the best always, and one of our best recipes is this one, that will make you a Cooking Beast!!!

 

INGREDIENTS

  • 2 1/2 cups unsalted chicken stock
  • 2 teaspoons Achiote paste
  • 1 tablespoon oil (for the rice)
  • 1/2 pounds or 1 1/4 cups dried red kidney beans
  • 1 1/4 teaspoons kosher salt
  • 2 ounces Mexican Chorizo, casings removed
  • 1 cup water (for the rice)
  • 1 tablespoon oil (for the beans)
  • 1 cup yellow onion, chopped
  • 2 tablespoons cilantro, finely chopped
  • 1 cup red bell pepper, chopped
  • 3 garlic cloves, finely chopped
  • 2 cups tomatoes, chopped
  • 2 teaspoons ground cumin
  • 1 cup rice

Guidelines

For red beans:

 

1 add some oil in your instapot. Warm up the oil by choosing the saute mode and normal heat.

2 next step you should cook chorizo so ad it to oil. Make sure it’s brown and crumbles by stirring it.

3 once chorizo had been brown, around 4 minutes, add garlic, bell pepper and onions, cook until they turn tender.

4 add in tomatoes cumin, salt, and achiote paste for seasoning the mixture. Stir and cook occasionally around 5 minutes.

 

5 once everything is a smooth paste, add in chicken stock. Stir and add red beans.

6 seal the instant pot and close the lid. Choose manual mode and 45 minutes on high pressure mode. 45 minutes over, hit quick release action and remove the lid carefully. If you find out that you need an extra cooking for your beans, you can provide a 5 minutes extra high pressure cooking.

7 put your saucy spicy red beans in bowls and garnish with cilantro.

For the rice:

The rice function on most instant pots will serve you best in case you are using white rice. The cooking timing will change according to your rice type.

1 run your rice under water to rinse it and keep doing so until the water runs clear.

2 add oil and rinsed rice to your instant pot with one pinch of salt.

3 close the lid and seal the instant pot and set the steam valve to sealing position. Hit the rice function. Set the timer for 4-8 minutes for basmati rice, 22-24 minutes for brown rice and 25-30 minutes for white rice.

4 release the pressure naturally for 10 minutes after hearing the beep of your instant pot, use quick release action if any pressure remains.

5 serve your rice alongside the previous red beans.

 

You need to cook the rice first before the beans, You know what I mean!!!
