This is one of the best and easiest recipes that you can reward yourself with, especially in your “lazy days”, this recipes is delicious anc very easy to prepare allowing you to taste your food, sharpen your cooking skills, and enjoying great tastes at the same time.
Your instant pot will make this supper easy and quick to prepare and enjoy, for 6 people and it needs only 30 minutes to be ready.
- Boneless chicken thighs- one pound
- Salt- as per taste
- Chicken broth- 1.5 cups
- Chopped Thyme leaves – 2 tablespoons
- White rice- 1.5 cup ( should be rinsed and drained before hand)
- Shallots- 3 (diced)
- Chicken broth- 1/3 cup (for de-glazing pan)
- Carrots- 3 (diced)
- pepper- as per taste
- Mushrooms- 1 cup (sliced)
- Garlic cloves- 2 medium sized
1 you take salt and pepper and you season your chicken thighs generously
2 second take your instant pot, choose the saute mode and let it per-heat for 2 minutes, ad some oil and the chicken thighs.
3 the oil sears the thighs, let it for 5 minutes on each side so the thighs will be well-seared.
4 remove your chicken thighs and set them aside once the desired results are obtained.
5 take your 1/3 cup of chicken broth and add it to the instant pot, this will DE-glaze the inside of the pot.
6 add garlic, mushroom, shallot and mushroom and cook all these ingredients for 4 minutes.
7 add thyme, drained rice, and the remaining chicken broth and stir all this mixture generously.
8 after putting the chicken pieces on top of this mixture, you seal your instant pot by placing the lid on.
9 set the timer for just 10 minute after choosing the high pressure mode on the control panel f your instant pot.
10 the 10 minutes are up, release the pressure naturally, don’t use the quick release, never.
11 normally after 15 minutes pressure would be released, once it’s done, unlock and remove the lid.
12 shred your chicken into pieces, inside the pot.
13 mix everything well with the rice and stir, it’s ready to be on the table of your family
You can serve it with yogurt and mashed potatoes, serve it hot.
