We can’t get enough of red lentils! In this recipe, they’re part of a spicy chili
with just a hint of sweetness from some brown sugar and apple cider vinegar.
The heat comes from a combination of cayenne, paprika, and chili powder.
To make this a full meal that can serve 4-5, serve over rice.
7 cups water
2 cups red lentils
2 diced red peppers
1 diced onion
14-ounce can of diced tomatoes
5 minced garlic cloves
¼ cup brown sugar
6-ounce can of tomato paste
2 tablespoons apple cider vinegar
1 tablespoon paprika
1 tablespoon chili powder
1 teaspoon cayenne
1. Prep your ingredients.
2. Throw everything in the pressure cooker and seal the lid.
3. Select “manual” and cook for 17 minutes on high pressure.
4. When the timer beeps, hit “cancel” and wait 15 minutes before quickreleasing.
5. Stir and serve over rice!
